Preparation
- Preheat your oven to 375°F (190°C).
- Season the chicken breasts generously with salt and pepper on both sides for extra flavor.
Cooking
- In a large oven-safe skillet, heat the olive oil over medium-high heat until shimmering.
- Add the chicken breasts and cook until golden brown, about 3-4 minutes per side.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the butter and minced garlic, sauté until fragrant, about 1 minute.
- Toss in the egg noodles and toast them slightly in the garlic butter for added depth of flavor, about 1-2 minutes.
- Pour in the chicken broth and heavy cream, stirring well to combine. Bring to a boil, then reduce to a gentle simmer.
- Nestle the chicken breasts back into the skillet, ensuring they are surrounded by noodles.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is fully cooked (internal temp of 165°F or 75°C).
- Remove from the oven and sprinkle Parmesan cheese over the chicken and noodles.
- Broil for an additional 2-3 minutes until the cheese is melted and bubbly.
- Garnish with freshly chopped parsley before serving.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently on the stovetop with a splash of chicken broth to maintain creaminess. Quality matters: use fresh ingredients whenever possible.
