Popsicle Base
  • 1 cup fresh squeezed orange juice from about 2-3 oranges
  • 1 cup coconut cream look for brands without additives like Thai Kitchen
  • 1/2 Tbsp orange zest freshly grated for the best flavor
  • 3 Tbsp raw honey adjust based on your sweetness preference
  • 2 tsp vanilla extract use pure vanilla for a rich taste
  • 1/4 cup collagen peptides optional, but great for added nutrition
  • 2 Tbsp tapioca starch helps thicken the mixture for a creamy texture
  • 1/4 tsp salt to enhance flavors

Method
 

Preparation
  1. Prepare your popsicle molds by placing them on a baking sheet for easy transport to the freezer. Insert popsicle sticks into each mold.
  2. In a blender, combine the fresh orange juice, coconut cream, orange zest, honey, vanilla extract, collagen peptides, tapioca starch, and salt. Blend until smooth and creamy, about 30 seconds to 1 minute.
  3. Pour the creamy mixture into the molds, filling them to the brim but leaving a little space at the top for expansion.
Freezing
  1. Transfer the baking sheet with molds to the freezer and let them freeze for at least 4 hours or overnight for the best results.
Serving
  1. When ready to enjoy, run the molds under warm water for a few seconds to help release the popsicles. Pull them out and savor the creamy, citrus goodness.

Notes

Store leftover popsicles in an airtight container in the freezer for up to 2 months, separated with parchment paper if stacking. Adjust honey based on the sweetness of oranges and ensure all ingredients are blended well for a smooth texture.
