  • 2 tablespoons sugar Adjust to taste.
  • 1 tablespoon baking powder Ensure it’s fresh for best results.
  • 1/2 teaspoon salt Enhances the flavor.
Wet Ingredients
  • 1 cup milk Whole milk recommended; can substitute dairy-free options.
  • 1 large egg Room temperature preferred.
  • 2 tablespoons melted butter Unsalted preferred; coconut oil for dairy-free.
  • 1 teaspoon vanilla extract Pure extract recommended for best flavor.
Optional Toppings
  • maple syrup, chocolate chips, diced fruit, powdered sugar Use according to preference.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and grease a mini muffin pan.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt until fully combined.
  3. In another bowl, mix the milk, egg, melted butter, and vanilla until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.
  5. Fill the mini muffin pan about 2/3 full with the batter.
  6. Add optional toppings before baking if desired.
Baking
  1. Bake for 10-12 minutes, or until a toothpick comes out clean.
  2. Let cool slightly before serving with maple syrup.

Notes

Store in an airtight container; can also be refrigerated or frozen for longer storage. Rotate muffin pan halfway through baking for even results.
