Preparation
- Preheat your oven to 375°F (190°C) and grease a mini muffin pan.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt until fully combined.
- In another bowl, mix the milk, egg, melted butter, and vanilla until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.
- Fill the mini muffin pan about 2/3 full with the batter.
- Add optional toppings before baking if desired.
Baking
- Bake for 10-12 minutes, or until a toothpick comes out clean.
- Let cool slightly before serving with maple syrup.
Notes
Store in an airtight container; can also be refrigerated or frozen for longer storage. Rotate muffin pan halfway through baking for even results.
