  • 2 pieces ripe peaches, sliced Make sure they are soft and fragrant; they should give slightly when you press them.
  • 1 cup blueberries Fresh are best, but frozen can also work; just make sure to thaw and drain them.
  • 4 cups mixed greens Such as arugula or spinach; feel free to mix and match.
Cheese and Nuts
  • 1/2 cup feta cheese, crumbled For an extra creamy texture, try using a high-quality brand.
  • 1/4 cup walnuts, chopped Optional but highly recommended for added crunch.
Dressing
  • 2 tablespoons olive oil Opt for a good extra virgin olive oil for the best taste.
  • 1 tablespoon balsamic vinegar Add a touch of sweetness; homemade or store-bought both work well.
  • to taste pinch salt and pepper I always say a pinch of each goes a long way!

Preparation
  1. Begin by washing your fruits and greens. Slice the peaches and have everything ready to go.
  2. In a large bowl, combine the sliced peaches, blueberries, and mixed greens.
  3. Gently fold in the crumbled feta cheese and walnuts, if using.
Dressing and Serving
  1. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper until combined.
  2. Drizzle the dressing over the salad and toss gently to combine.
  3. Serve right away to experience the freshness and vibrant flavors.

Notes

For best flavor, prep ingredients without dressing up to one hour ahead. Dress it right before serving to prevent wilting. If you have leftovers, store in an airtight container without dressing and eat within 2 days.
