Preparation
- Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a mixing bowl, combine the diced peaches, granulated sugar, and lemon juice. Allow the mixture to rest while you prepare the crumble.
- In a separate bowl, whisk together the flour, oats, brown sugar, baking powder, and salt. Cut in the softened butter and add the vanilla extract, working until the mixture resembles coarse crumbs.
Assembly
- Firmly press half of the crumb mixture into the bottom of the greased baking dish.
- Spread the peach mixture over the crust, covering it evenly.
- Sprinkle the remaining crumb mixture on top of the peaches.
Baking
- Bake for 35-40 minutes until the top is golden brown.
- Cool before slicing into squares. Serve with a scoop of vanilla ice cream if desired.
Notes
These bars can be plated on a rustic wooden board and garnished with fresh mint. They pair well with iced tea or vanilla ice cream. Store in the refrigerator for up to a week.
