Scones
  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder Leavening agent
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed For best results, use European-style butter
  • 1 cup fresh peaches, diced Opt for organic peaches for better flavor
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
Glaze
  • 1/2 cup powdered sugar
  • 1 tablespoon honey
  • as needed tablespoon water To achieve desired consistency

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix together the flour, sugar, baking powder, and salt until well combined.
  3. Add the cubed butter and mix until the mixture resembles coarse crumbs.
  4. Gently fold in the diced peaches, ensuring they are evenly distributed.
  5. In another bowl, whisk together the heavy cream and vanilla extract until smooth.
  6. Pour the wet ingredients into the dry mixture and stir just until combined to avoid overworking the dough.
  7. Turn the dough onto a floured surface, and gently pat it into a circle about 1 inch thick. Cut into wedges and place on a lined baking sheet.
  8. Bake for 15-20 minutes or until golden brown and fragrant.
Glazing
  1. For the glaze, whisk together the powdered sugar, honey, and just enough water to achieve a smooth consistency. Drizzle generously over warm scones before serving.

Notes

To revive your scones, reheat them in an oven or air fryer at a low temperature until warmed through. Store in an airtight container at room temperature for up to 2 days, or freeze for longer storage.
