Preparation
  1. In a heavy-bottomed saucepan, combine the sugar, corn syrup, and water. Heat over medium heat, stirring occasionally until the mixture reaches 240°F (firm ball stage).
  2. Next, stir in the peanuts and continue cooking, stirring constantly, until it reaches 300°F (hard crack stage).
  3. Remove from heat and quickly stir in the butter, vanilla, baking soda, and a pinch of salt until fully combined. Be cautious as the mixture will bubble up!
  4. Pour the hot mixture onto a greased baking sheet and spread it out evenly.
  5. Allow it to cool completely before breaking it into pieces.

Notes

For a healthier option, consider replacing refined sugar with monk fruit sweetener or coconut sugar. This recipe is gluten-free and can be made keto by substituting traditional sugar with erythritol or allulose.
