Ingredients
  

Mushrooms
  • 8 medium medium portobello mushrooms Choose fresh, firm mushrooms with no blemishes. Can substitute with button mushrooms.
Sauce & Seasoning
  • 1/2 cup pizza sauce Use store-bought or homemade. Rao’s Homemade is recommended for great flavor.
  • 8 leaves basil leaves (halved) Fresh basil is ideal; use dried basil as a substitute in smaller amounts.
Meat
  • 16 slices pepperoni (thinly sliced) Opt for a premium brand for best flavor. Can swap with turkey pepperoni or omit for a vegetarian option.
Cheese
  • 2 cups mozzarella cheese (grated) Freshly grated for gooey texture; whole milk mozzarella gives richer flavor.
Herbs
  • 2 tablespoons parsley (chopped) Can substitute with other herbs like oregano or thyme.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper or lightly spray with cooking oil.
  3. Remove the stems from the portobello mushrooms and reserve for another use.
  4. Place mushrooms stem side up on the baking sheet, spaced evenly.
Filling
  1. Spoon 2-3 tablespoons of pizza sauce into each mushroom cavity.
  2. Add a halved basil leaf and two slices of pepperoni.
  3. Top with mozzarella cheese evenly divided among the mushrooms.
Baking
  1. Bake in the center of the oven for about 15 minutes until cheese is bubbly and golden.
  2. Garnish with chopped parsley and serve warm.

Notes

For extra flavor, broil for one minute at the end, watching closely to prevent burning. Leftover mushrooms can be stored in an airtight container in the fridge for up to 3 days.
