Ingredients
  

Dry Ingredients
  • 1 ½ cups all-purpose flour Can substitute with whole wheat flour.
  • 2 cups rolled oats Use old-fashioned rolled oats, not quick oats.
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon kosher salt
  • 1 tablespoon pumpkin pie spice For robust flavor.
  • ¼ teaspoon nutmeg Fresh nutmeg is recommended.
Wet Ingredients
  • ½ cup unsalted butter, room temperature Let sit for about 30 minutes before using.
  • 1 cup light brown sugar, packed Dark brown sugar can be used if needed.
  • 2 large eggs, room temperature Room temperature eggs mix better.
  • 1 teaspoon vanilla extract Use pure vanilla extract for best flavor.
  • 1 tablespoon molasses Can be substituted with honey.

Method
 

Preheat the Oven
  1. Preheat your oven to 400°F (200°C).
Prepare Your Baking Sheet
  1. Line a baking sheet with parchment paper.
Combine Dry Ingredients
  1. In a large mixing bowl, whisk together flour, oats, baking powder, baking soda, salt, pumpkin pie spice, and nutmeg.
Cream Butter and Sugar
  1. In a stand mixer, beat butter and brown sugar on low speed for 2-3 minutes until smooth.
  2. Scrape down the bowl to avoid gritty sugar at the bottom.
Add Wet Ingredients
  1. Slowly add eggs, vanilla, and molasses to the creamed mixture and mix until fully incorporated.
Mix Dry Ingredients
  1. Slowly add the dry ingredients to the wet mixture and mix until just combined.
Shape the Cookies
  1. Using a 2-tablespoon scoop, drop the dough onto the prepared baking sheet, leaving space between each dough ball.
  2. Gently press the dough balls to slightly flatten.
Bake
  1. Bake in the preheated oven for 7-8 minutes until slightly golden.
Cool Down
  1. Let the cookies rest on the baking sheet for a couple of minutes before transferring them to a wire rack.
