Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, cream together the softened butter, sugar, and brown sugar until smooth.
  3. Beat in the egg and vanilla until well combined.
  4. In a separate bowl, mix together the flour, oats, shredded coconut, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chocolate chips.
Baking
  1. Drop spoonfuls of the dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  2. Bake for 10-12 minutes or until the edges are golden.
  3. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For a healthier option, replace refined sugar with monk fruit or coconut sugar, and consider adding chia or flaxseeds for added fiber. If the cookies spread too much, chill the dough for 30 minutes before baking.
