For the Cookies
  • 1 cup unsalted butter, softened Use high-quality butter for the best flavor.

  • ½ cup almond flour This adds a delightful nuttiness; substitute with more all-purpose flour if nut allergies are a concern.
  • 1 teaspoon vanilla extract Use pure vanilla for maximum flavor impact.
  • ½ teaspoon salt Enhances the overall cookie flavor.
  • 1 cup raspberry jam Opt for a natural brand without additives for the best taste.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter and powdered sugar until the mixture reaches a light and fluffy consistency, about 3-4 minutes.
  3. Add in the vanilla extract and mix until combined.
  4. Gradually add the all-purpose flour, almond flour, and salt. Blend until a dough forms.
  5. On a lightly floured surface, roll the dough out to about ¼ inch thick.
  6. Use your favorite cookie cutters to cut out shapes, and with a smaller cookie cutter, cut out the centers of half of the cookies.
  7. Place the solid cookie shapes on a baking sheet lined with parchment paper. Spoon a bit of raspberry jam into the center of each cookie with a cut-out.
  8. Sandwich each cut-out cookie with a jam-filled solid cookie.
Baking
  1. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  2. Let them cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For a more uniform shape, chill the dough for about 30 minutes before rolling it out. Store your cookies in an airtight container for up to a week.
