Preparation
- Preheat your oven to 350°F (175°C). Grease a pie dish.
- In a large bowl, combine the grated zucchini, Parmesan cheese, and ricotta cheese, mixing until well blended.
- In a separate bowl, beat the eggs and then add to the zucchini mixture. Mix thoroughly.
- In another bowl, whisk together the flour, baking powder, salt, black pepper, garlic powder, and onion powder until evenly distributed.
- Gradually add the dry ingredients to the zucchini mixture, stirring until everything is well combined.
- If using, fold in the chopped fresh herbs, ensuring they are evenly dispersed.
- Pour the mixture into the prepared pie dish, smoothing the top with a spatula.
- Bake for 45-50 minutes, or until the top is golden brown, and a knife inserted in the center comes out clean.
- Allow to cool slightly before slicing and serving.
Notes
Consider serving with a light salad or tangy yogurt sauce. Great as a centerpiece for summer picnics or family gatherings. Avoid microwaving for reheating as it may make the pie soggy.
