For the Cookie Dough
  • 1 cup unsalted butter, softened Use high-fat butter for rich flavor.
  • 1/2 cup powdered sugar Can be substituted with powdered erythritol.
  • 2 cups all-purpose flour Use freshly opened flour or gluten-free blend if needed.
  • 1/4 teaspoon salt Enhances flavor, balancing out sweetness.
  • 1 teaspoon vanilla extract Use authentic or homemade vanilla extract for depth of flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy (about 3-4 minutes with an electric mixer).
  3. Mix in the vanilla extract until well combined.
  4. Gradually add the flour and salt, mixing until just combined to avoid overmixing.
  5. Roll the dough into balls or shape as desired, then place them on a baking sheet lined with parchment paper, leaving space in between for expansion.
Baking
  1. Bake for 12-15 minutes, watching closely until the edges are lightly golden.
  2. Allow to cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

Store cookies in an airtight container at room temperature for about a week. Dough can be made ahead, stored in the fridge for 3 days or frozen for up to 3 months. Chill the dough if it's too soft before rolling.
