Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy (about 3-4 minutes with an electric mixer).
- Mix in the vanilla extract until well combined.
- Gradually add the flour and salt, mixing until just combined to avoid overmixing.
- Roll the dough into balls or shape as desired, then place them on a baking sheet lined with parchment paper, leaving space in between for expansion.
Baking
- Bake for 12-15 minutes, watching closely until the edges are lightly golden.
- Allow to cool on the baking sheet for a few minutes before transferring them to a wire rack.
Notes
Store cookies in an airtight container at room temperature for about a week. Dough can be made ahead, stored in the fridge for 3 days or frozen for up to 3 months. Chill the dough if it's too soft before rolling.
