- Preheat your oven to 375°F (190°C).
- Arrange your baguette slices on a baking sheet in a single layer and toast them in the oven for 5–7 minutes, or until golden brown.
- While the bread is warm, rub the cut side of a garlic clove along the surface of each slice.
- In a mixing bowl, combine the diced tomatoes, chopped basil, minced garlic, olive oil, and season with salt and pepper. Let the mixture rest for about 10 minutes.
- Gently fold the soft white cheese into the tomato mixture.
- Arrange the toasted baguette slices in a circular pattern on a serving platter, then spoon the tomato and cheese mixture onto each slice.
- Garnish with fresh rosemary sprigs and grated Parmesan, if desired.
- Serve immediately for best flavor and texture.
Notes
For a vegan version, consider using cashew cheese or tofu-based spreads. Store the tomato topping in an airtight container in the fridge for up to 2 days.
