For the Bruschetta
  • 4 ripe Roma tomatoes, diced Use the ripest tomatoes for best flavor.
  • 1/4 cup fresh basil leaves, finely chopped Preferably organic for maximum flavor.
  • 2 cloves garlic, minced
  • 2 tablespoons extra virgin olive oil Good quality enhances flavor.
  • to taste Salt and pepper
  • 1 baguette, sliced into 1/2-inch rounds
  • 1 clove garlic, for rubbing the bread Enhances the garlic flavor on the bread.
  • 1/2 cup soft white cheese Choose between ricotta, cream cheese, or mozzarella pearls.
  • optional Grated Parmesan For that extra umami flavor.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Arrange your baguette slices on a baking sheet in a single layer and toast them in the oven for 5–7 minutes, or until golden brown.
  3. While the bread is warm, rub the cut side of a garlic clove along the surface of each slice.
  4. In a mixing bowl, combine the diced tomatoes, chopped basil, minced garlic, olive oil, and season with salt and pepper. Let the mixture rest for about 10 minutes.
  5. Gently fold the soft white cheese into the tomato mixture.
  6. Arrange the toasted baguette slices in a circular pattern on a serving platter, then spoon the tomato and cheese mixture onto each slice.
  7. Garnish with fresh rosemary sprigs and grated Parmesan, if desired.
  8. Serve immediately for best flavor and texture.

Notes

For a vegan version, consider using cashew cheese or tofu-based spreads. Store the tomato topping in an airtight container in the fridge for up to 2 days.
