  • 4 large yellow onions, thinly sliced Opt for organic if available for richer flavor.

  • 1/4 cup vegetable broth Homemade is best; chicken broth can also be used.
For the pasta
  • 1 lb pasta (spaghetti, fettuccine, or penne) Choose your favorite shape.
  • 1/2 cup Parmesan cheese, grated Substitute with nutritional yeast for a vegan option.
  • 1/4 cup fresh parsley, chopped For garnish, adds freshness.
  • to taste salt and pepper Essential for balancing flavors.

Method
 

Preparation
  1. Thinly slice onions and add them to the slow cooker.
  2. Add olive oil or butter, salt, and optional sugar. Stir until well coated. Cover and cook on low for 8-10 hours.
  3. 30 minutes before completion, add minced garlic, thyme, rosemary, and vegetable broth. Stir well.
Cooking the Pasta
  1. Boil the pasta according to package instructions in salted water, reserving a cup of pasta water before draining.
  2. Once the onions are fully caramelized, mix the pasta with caramelized onions, adding reserved pasta water as needed.
Finishing Touches
  1. Stir in Parmesan cheese, season with salt and pepper, and garnish with fresh parsley.
  2. Serve warm and enjoy the delightful flavors!

This dish can be stored in the refrigerator for up to 3 days. Prepare onions in advance for quick meal assembly.
