  • 1 can diced tomatoes with green chilies Make sure it’s undrained for more sauce.
  • 1 packet taco seasoning Homemade mixes are great; adjust spice levels to your liking.
  • 1 cup chicken broth Low-sodium is a healthier option; homemade broth adds more flavor.
  • 1 piece bell pepper, chopped Any color works, red or yellow preferred for sweetness.
  • 1 piece onion, chopped Sweet onions complement the spices.

Preparation
  1. Place the chicken breast in the slow cooker, spreading them evenly across the base.
  2. Add black beans, corn, diced tomatoes, taco seasoning, chicken broth, bell pepper, and onion on top.
  3. Stir to combine all the ingredients, ensuring even seasoning coverage.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Shred the chicken before serving using two forks or a meat shredder.
  6. Serve with rice or tortillas, garnished with fresh cilantro and avocado.

Notes

For make-ahead instructions, prep the night before and refrigerate. Leftovers keep in an airtight container in the fridge for up to four days or freeze for up to three months. Add cream cheese or sour cream for a creamy twist before serving.
