For the Brownie Base
  • 1 box brownie mix Choose a high-quality brand like Ghirardelli or Duncan Hines.
  • 1 large egg Bring to room temperature for a smoother batter.
  • 1/4 cup water Ensure it’s at room temperature.
  • 1/3 cup vegetable oil A neutral oil works best; coconut oil is a good substitute.
For the Cookie Dough Layer
  • 1 cup cookie dough Store-bought or homemade, a quality option like Toll House is recommended.
For the Top
  • 1/2 cup chocolate chips Use semi-sweet or dark chocolate chips.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, prepare the brownie mix according to package instructions, adding the egg, water, and vegetable oil until just combined. Don't overmix!
  3. Pour half of the brownie batter into a greased 9x9 inch baking pan, spreading it evenly.
  4. Gently spread the cookie dough over the brownie layer.
  5. Carefully pour the remaining brownie batter on top of the cookie dough layer.
  6. Sprinkle chocolate chips on top.
Baking
  1. Place the pan in the oven, baking for about 30-35 minutes.
  2. When a toothpick comes out with a few moist crumbs, it's done.
  3. Allow to cool for at least 10-15 minutes before cutting into squares.

Notes

Ensure cookie dough is at room temperature for easy spreading. Underbaking is okay; brownies will continue cooking after removal from the oven. Keep in an airtight container at room temperature for up to 3 days or in the fridge for 1 week.
