Ingredients
  

For the Tofu
  • 1 block (15 oz) organic tofu, firm or extra firm Opt for organic if possible. This holds the flavor well and has the right texture.
  • 2 tablespoons pure maple syrup Adds a perfect hint of sweetness to the marinade.
  • 1 tablespoon tamari, coconut aminos, or soy sauce Choose tamari for gluten-free or coconut aminos for a lighter taste.
  • 1 tablespoon water Helps to make the marinade more fluid.
  • 1/4 teaspoon smoked paprika This adds a beautiful depth to the marinated tofu.
  • 1/4 teaspoon chipotle powder Adjust based on your spice preference.
  • 1/4 teaspoon garlic powder A delightful addition for extra flavor.
For the Sandwich Assembly
  • 1 onion thinly sliced Sweet onions caramelize beautifully, enhancing the overall sandwich experience.
  • 2 tablespoons olive oil, divided Extra virgin olive oil is recommended for a rich flavor.
  • 1 medium tomato, sliced thin Heirloom tomatoes add a splash of color and flavor.
  • 1 1/2 small avocados, mashed Use ripe avocados for the best flavor and ease of mashing.
  • 6 slices bread of choice Whole grain or sourdough works wonderfully.
  • Dijon or stone-ground to taste mustard Adds that tangy kick!
  • a few leaves of your favorite leafy greens They add freshness!

Method
 

Preparation
  1. Begin by cutting the tofu into thirds. Press to remove excess water, wrapping it in a clean kitchen towel and placing a heavy object on top.
  2. Slice each slab in half to end up with 6 pieces perfect for stacking.
  3. In a shallow dish, mix the marinade ingredients (maple syrup, tamari, water, smoked paprika, chipotle powder, and garlic powder) and soak the tofu for 30 minutes to 1 hour.
  4. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and cook, stirring often, for 10 to 15 minutes, until golden and caramelized.
  5. In the same skillet, add the marinated tofu. Cook for about 5 minutes on each side until browned and crispy.
  6. Toast your bread until golden. Spread mustard on one side and mashed avocado on the other.
  7. Start layering! On one slice, add a few leaves of greens, followed by the tofu, caramelized onions, and tomato slices. Top with the other slice of bread.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. For best results, keep the ingredients separate until you’re ready to eat to prevent soggy bread. Can prepare tofu and onions in advance to assemble before mealtime.
