Preparation
- Begin by cutting the tofu into thirds. Press to remove excess water, wrapping it in a clean kitchen towel and placing a heavy object on top.
- Slice each slab in half to end up with 6 pieces perfect for stacking.
- In a shallow dish, mix the marinade ingredients (maple syrup, tamari, water, smoked paprika, chipotle powder, and garlic powder) and soak the tofu for 30 minutes to 1 hour.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and cook, stirring often, for 10 to 15 minutes, until golden and caramelized.
- In the same skillet, add the marinated tofu. Cook for about 5 minutes on each side until browned and crispy.
- Toast your bread until golden. Spread mustard on one side and mashed avocado on the other.
- Start layering! On one slice, add a few leaves of greens, followed by the tofu, caramelized onions, and tomato slices. Top with the other slice of bread.

Notes
Store leftovers in an airtight container in the fridge for up to 3 days. For best results, keep the ingredients separate until you’re ready to eat to prevent soggy bread. Can prepare tofu and onions in advance to assemble before mealtime.
