Pork Chops
  • 4 pieces pork chops Bone-in for more flavor and moisture retention.
  • Salt and pepper to taste
Onion & Garlic
  • 1 large onion, sliced
  • 3 cloves garlic, minced
Cheese & Liquid
  • 1 cup shredded cheese (cheddar or your choice) Use freshly shredded for a creamier melt.
  • 1 cup chicken broth or water
Oil
  • 2 tablespoons olive oil

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) to create the ideal baking environment for your dish.
  2. Generously season the pork chops with salt and pepper, ensuring they’re coated for optimal flavor.
  3. In a heavy-bottomed cast iron skillet, heat the olive oil over medium heat until shimmering. Carefully add the pork chops, searing them until browned on both sides (about 3-4 minutes each).
  4. Remove the pork chops from the skillet and set them aside, allowing the pan to cool slightly.
  5. In the same skillet, introduce your sliced onions and minced garlic. Sauté until the onions turn translucent and fragrant—this will take about 5 minutes.
Cooking
  1. Add the chicken broth (or water) to the skillet, scraping up any brown bits, and bring to a simmer.
  2. Carefully return the seared pork chops to the skillet, nestled in the onion mix.
  3. Sprinkle your shredded cheese generously over the top of the pork chops.
  4. Cover the skillet with a lid or foil and transfer it to the preheated oven. Bake for 25-30 minutes, or until the pork chops are cooked through and tender.
  5. Serve warm, spooning the delicious onion and cheese sauce over the chops.

Notes

To elevate the nutritional content, serve with brown rice or quinoa for added fiber, and consider adding sautéed spinach or kale to the sauce. For variations, consider a vegan option with firm tofu and nutritional yeast, or gluten-free options using cornstarch.
