Preparation
  1. Preheat the oven to 325°F (163°C) to ensure even baking.
  2. In a bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter until evenly mixed. Press firmly into the bottom of a 9-inch springform pan.
  3. In a large mixing bowl, beat the softened cream cheese until smooth, about 2 minutes. Gradually add 1 cup sugar, mixing until well blended.
  4. Add eggs one at a time, mixing thoroughly after each. Stir in vanilla, cinnamon, and sour cream for a creamy consistency.
  5. Gently add all-purpose flour and blend until combined—avoid overmixing.
  6. Pour the cream cheese mixture over the prepared crust.
Baking
  1. Bake for 55-60 minutes until the center is set but slightly jiggly.
