Preparation
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large mixing bowl, beat together 1 cup granulated sugar and 1/2 cup softened butter until creamy and smooth, about 3 minutes.
- Mix in 1 egg and 1 teaspoon vanilla extract until fully combined, creating a smooth, glossy mixture.
- In a separate bowl, whisk together 2 cups all-purpose flour, 1/2 teaspoon baking soda, 1/2 teaspoon baking powder, and 1/4 teaspoon salt until well blended.
- Gradually blend the dry ingredients into the wet mixture. Mix until just combined; don’t overmix.
- Cover the bowl and chill the dough in the fridge for at least 30 minutes.
Baking
- Using a tablespoon or cookie scoop, roll the chilled dough into balls (about 1 inch in diameter).
- Roll each dough ball in the 1/4 cup of granulated sugar until fully coated.
- Place the cookies on the prepared baking sheets, spacing them about 2 inches apart. Bake in the preheated oven for 8-10 minutes.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
Store cookies in an airtight container for up to a week. You can freeze them for up to 3 months.
