Ingredients
  

For the Cookies
  • 1 cup unsalted butter, softened to room temperature For the best texture.

  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract Use pure vanilla for best results.
  • 1 teaspoon almond extract Adds a beautiful aroma.
  • 1/4 teaspoon salt
For the Filling
  • 1 cup raspberry jam or your favorite fruit preserve Choose high-quality!
For Garnish (optional)
  • powdered sugar For dusting.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
  3. Create a well in the center and add the egg, vanilla extract, and almond extract. Mix until fully incorporated.
  4. In a separate bowl, whisk together the all-purpose flour, almond flour, and salt. Gradually add this mixture to the wet ingredients, mixing until just combined.
  5. Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
Baking
  1. Once chilled, roll out the dough on a lightly floured surface to about 1/8 inch thick. Use a cookie cutter to cut out shapes and a smaller cutter for the center of half of the cookies.
  2. Place the cookies on a baking sheet lined with parchment paper and bake for 10-12 minutes, or until the edges are gently golden brown.
Assembly
  1. After removing from the oven, let them cool on the sheet for a few minutes before transferring them to a wire rack.
  2. Once cool, spread a generous tablespoon of your chosen jam on the solid cookie and top with the cut-out cookie. Dust with powdered sugar for an extra touch of sweetness.

Notes

Store cookies in an airtight container at room temperature for up to 5 days. Freeze unbaked dough for up to a month. Ensure butter is at correct temperature to avoid spreading.
