  • 1 cup Granulated Sugar Can be substituted with coconut sugar.
  • 1 cup Unsalted Butter Use room-temperature butter; margarine can be used for a dairy-free option.
  • 2 large Eggs No substitutes.
  • 1 teaspoon Vanilla Extract Pure vanilla is best.
  • 1 cup Colored Icing or Sprinkles For decoration.
  • 1 cup Powdered Sugar Optional for dusting.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In another bowl, cream together the butter and granulated sugar using an electric mixer on medium speed for about 2-3 minutes until light and fluffy.
  4. Beat in the eggs one at a time, followed by the vanilla extract. Mix until well combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing just until the flour disappears. Avoid overmixing.
  6. Chill the dough in the refrigerator for at least 30 minutes.
Baking
  1. Roll the dough into small balls (about two tablespoons each) and place them on a baking sheet lined with parchment paper.
  2. Bake for 10-12 minutes, or until the edges are lightly golden and the centers appear set.
  3. Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack.
  4. Decorate the cookies with icing or sprinkles once cooled.

Notes

Store cookies in an airtight container at room temperature for up to one week. If they harden, place a piece of bread in the container to keep them soft.
