Preparation
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, whisk together the flour, baking powder, and salt. Set aside.
- In another bowl, cream together the butter and granulated sugar using an electric mixer on medium speed for about 2-3 minutes until light and fluffy.
- Beat in the eggs one at a time, followed by the vanilla extract. Mix until well combined.
- Gradually add the dry ingredients to the wet mixture, mixing just until the flour disappears. Avoid overmixing.
- Chill the dough in the refrigerator for at least 30 minutes.
Baking
- Roll the dough into small balls (about two tablespoons each) and place them on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes, or until the edges are lightly golden and the centers appear set.
- Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack.
- Decorate the cookies with icing or sprinkles once cooled.
Notes
Store cookies in an airtight container at room temperature for up to one week. If they harden, place a piece of bread in the container to keep them soft.
