For the Cinnamon Sugar Topping
  • 3 tablespoons brown sugar Provides sweetness and moisture.
  • 1 1/2 tablespoons ground cinnamon Use Ceylon cinnamon for a more complex flavor.

Method
 

Preparation
  1. Preheat your oven to 350 degrees Fahrenheit.
  2. Blend 1 cup of cottage cheese in a food processor until silky smooth.
  3. In a small bowl, whisk together 3 tablespoons of brown sugar with 1 1/2 tablespoons of cinnamon.
  4. Beat 1 egg in a separate bowl for brushing on the bagels.
  5. In a large bowl, combine 1 1/4 cups of self-rising flour with 1/4 teaspoon salt.
Mixing & Shaping
  1. Add the smooth cottage cheese to the flour mixture, stirring until a shaggy dough forms.
  2. Lightly flour your work surface, then knead the dough by hand for 2-3 minutes until smooth.
  3. Divide the dough into four pieces, roll each piece into a rope, and shape into a bagel.
Baking
  1. Place the bagels on a lined baking sheet. Brush with the beaten egg and coat with the cinnamon sugar mixture.
  2. Bake for 25-28 minutes until golden brown.
  3. Let cool for 5 minutes on the baking sheet before transferring to a wire rack.

Notes

Best enjoyed fresh but can be stored in an airtight container at room temperature for up to 3 days or frozen for up to a month. You can prepare the dough ahead of time and refrigerate overnight before baking.
