  • 2 cups fresh peaches, peeled and diced Always opt for ripe, seasonal peaches for the best flavor.
  • 1/2 cup sugar Can be replaced with monk fruit sweetener for less sugar.
  • 1/4 cup brown sugar Can be substituted with white sugar, but may lose some depth of flavor.
  • 1/2 cup vegetable oil
  • 2 large eggs Use room-temperature eggs for a smoother batter. Can be replaced with flaxseed eggs for a vegan option.
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour Can be replaced with a gluten-free flour blend for gluten-free option.
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon Other spices like nutmeg or allspice can also be added.
  • 1/2 cup chopped nuts Optional; walnuts or pecans work best with peach flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large mixing bowl, combine the diced peaches, sugar, brown sugar, oil, eggs, and vanilla extract. Whisk until well blended.
  3. In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
  4. Gradually add the dry mixture to the peach mixture, stirring until just combined. Fold in nuts if using.
  5. Pour the batter into the prepared loaf pan and smooth the top.
Baking
  1. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  2. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

Serve this peach bread warm, dusted lightly with powdered sugar. Pair it with a scoop of vanilla ice cream for dessert.
