Ingredients

Main ingredients
  • 2 cups cooked chicken, shredded Use rotisserie chicken for ultimate ease or grill your chicken fresh for smoky flavor.
  • 1 cup black beans, rinsed and drained Canned beans are great, cooking dried beans from scratch adds depth!
  • 1 cup corn, drained Canned corn works, but fresh or frozen corn adds sweetness when in season.
  • 1 cup cherry tomatoes, halved These add color and sweetness; use a mix for visual appeal!
  • 1 avocado, diced Opt for ripe ones for the best texture.
  • 1/2 cup red onion, diced Soak in cold water for a milder taste before adding.
  • 1/2 cup cilantro, chopped Fresh cilantro is key, parsley can work well for those who dislike it.
Dressing
  • 1/4 cup lime juice Fresh lime juice gives the best flavor.
  • 2 tablespoons olive oil Extra virgin enhances flavors.
  • Salt and pepper to taste Seasoning is crucial for balance.

Method

Preparation
  1. In a large bowl, combine cooked chicken, black beans, corn, cherry tomatoes, avocado, red onion, and cilantro.
  2. In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
  3. Pour the dressing over the salad mixture and toss gently to combine.
  4. Serve immediately or refrigerate for about 30 minutes for the flavors to meld.

Notes

Always have all your ingredients at room temperature for the best blending. Be careful when tossing to avoid crushing the avocado. You can customize by adding jalapeƱos or fruits like mango.
