Ingredients

For the Cake
  • 2 cups all-purpose flour Use a high-quality brand for light and fluffy texture.
  • 1.5 cups granulated sugar Consider using organic sugar for richer flavor.
  • 0.5 cups unsalted butter, softened Ensure it’s at room temperature for fluffy batter.
  • 1 cup milk Whole milk recommended, alternatives may vary flavor.
  • 3 large eggs Fresh, organic eggs provide the best taste and structure.
  • 1 tablespoon baking powder Ensure it’s fresh for the best rise.
  • 1 tablespoon ground cinnamon Use Ceylon cinnamon for delicate sweetness.
  • 1 teaspoon ground ginger Freshly grated ginger gives a vibrant flavor.
  • 1 teaspoon ground cardamom Adds warmth; consider grinding whole pods.
  • 0.5 teaspoon ground cloves Freshly ground for best flavor.
  • 0.5 teaspoon salt Balances sweetness.
  • 1 teaspoon vanilla extract Opt for pure vanilla for enhanced flavor.
For the Frosting
  • 8 oz cream cheese, softened Room temperature is essential.
  • 4 cups powdered sugar Sifted to avoid clumps.
  • 0.25 cups unsalted butter, softened Contributes to a richer texture.

Method

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy—around 5 minutes.
  3. Beat in the eggs, one at a time, ensuring each is well incorporated before adding the next. Lastly, stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, cinnamon, ginger, cardamom, cloves, and salt.
  5. Gradually add the dry mixture to the wet mixture, alternating with the milk. Mix until just combined.
  6. Divide the batter evenly between the prepared pans and smooth the tops.
Baking
  1. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow the cakes to cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
Frosting
  1. While the cakes are cooling, beat together the softened cream cheese and butter until smooth. Gradually add sifted powdered sugar until you reach your desired sweetness.
  2. Once cooled, frost the top of one layer, place the second layer on top, and finish by frosting the top and sides.
Serving
  1. Slice, serve, and enjoy!

Notes

Ensure all ingredients are at room temperature for optimal mixing. Using high-quality spices will elevate the flavor.
