  • 2 tbsp olive oil Extra virgin olive oil is recommended.
  • 4 cloves garlic, minced Fresh cloves work best, but jarred can be used in a pinch.
  • 1 cup heavy cream Organic heavy cream is preferred.
  • 1/2 cup beef broth Homemade is excellent; low-sodium store-bought works, too.
  • 1/4 cup Parmesan cheese, grated Freshly grated for best flavor.
  • 1 tsp black pepper Use freshly cracked for enhanced spice.
  • 1/2 tsp salt Adjust according to taste.
  • to taste Fresh parsley, chopped For garnish.

Method
 

Preparation
  1. Bring steaks to room temperature for about 30 minutes before cooking.
  2. Preheat a large skillet and heat olive oil over medium-high heat until shimmering.
Cooking
  1. Season the steaks generously with salt and pepper. Place them in the skillet and cook for about 4 to 5 minutes per side for medium-rare.
  2. Remove the steaks from the skillet and let them rest on a plate.
  3. In the same skillet, sauté the minced garlic for about 1 minute until fragrant.
  4. Add beef broth and scrape up browned bits from the bottom of the pan. Stir in heavy cream and Parmesan cheese, whisking until thickened (about 5-7 minutes).
  5. Return the steaks to the skillet, spoon the garlic cream sauce over them, and rest for 1-2 minutes before serving.
Serving
  1. Garnish with fresh chopped parsley and serve with side dishes like mashed potatoes or roasted asparagus.
