Preparation
- Bring steaks to room temperature for about 30 minutes before cooking.
- Preheat a large skillet and heat olive oil over medium-high heat until shimmering.
Cooking
- Season the steaks generously with salt and pepper. Place them in the skillet and cook for about 4 to 5 minutes per side for medium-rare.
- Remove the steaks from the skillet and let them rest on a plate.
- In the same skillet, sauté the minced garlic for about 1 minute until fragrant.
- Add beef broth and scrape up browned bits from the bottom of the pan. Stir in heavy cream and Parmesan cheese, whisking until thickened (about 5-7 minutes).
- Return the steaks to the skillet, spoon the garlic cream sauce over them, and rest for 1-2 minutes before serving.
Serving
- Garnish with fresh chopped parsley and serve with side dishes like mashed potatoes or roasted asparagus.
