Ingredients
  

For the Cake Base
  • 1 box strawberry cake mix Follow the instructions on the box, usually includes oil, eggs, and water.
For the Cream Cheese Mixture
  • 8 oz cream cheese, softened Room temperature for easy mixing.
  • 1/2 cup powdered sugar For a sweet creaminess.
  • 1 tsp vanilla extract Adds depth of flavor.
For the Strawberry Glaze
  • 1 cup fresh strawberries, mashed Summery sweetness!
  • 1/3 cup granulated sugar To balance out the tartness.
  • 1 tbsp lemon juice Brightens the flavors.
  • 1 tsp cornstarch mixed with water For a thickened glaze.
For Garnish
  • Fresh strawberries Fresh strawberries for garnish

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, follow the instructions on the strawberry cake mix box, usually involving oil, eggs, and water. Mix well until combined and smooth.
  3. Pour the cake batter into a greased baking dish, preferably 9x13.
Cream Cheese Blend
  1. In another bowl, blend the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  2. Drop spoonfuls of the cream cheese mixture onto the batter. Gently swirl the cream cheese into the cake batter for that signature earthquake look.
Baking
  1. Place in your preheated oven and bake for 30-35 minutes, checking with a toothpick to ensure it comes out clean.
Strawberry Glaze Preparation
  1. While the cake bakes, in a saucepan, combine the mashed strawberries, granulated sugar, and lemon juice. Cook over medium heat until the sugar dissolves.
  2. Stir in the cornstarch mixture and simmer until thickened.
Finishing Touches
  1. Once the cake cools slightly, drizzle it with the strawberry glaze. Garnish with fresh berries and optionally a drizzle of white chocolate.

Notes

Use a light hand when swirling the cream cheese to emphasize the layers. Avoid overbaking for a moist texture.
