  • 2 cups low sodium chicken stock
  • 1/4 cup Rogers Porridge Oats & Healthy Grains great for added texture!
  • 1 medium onion, diced for aromatic goodness
  • 1 medium sweet potato, peeled & cut into 1/2" slices sweet and creamy!
  • 2 apples, unpeeled, cored, and sliced into 1/2" slices I love using Granny Smith for a tart contrast!
  • 1 lb cooked turkey slices leftover turkey is perfect here
  • 2 tbsp fresh thyme leaves or 1 tbsp dried, if that’s what you have
  • 1 tbsp fresh sage leaves, chopped herbs add such depth!
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 cup Rogers Porridge Oats & Healthy Grains for topping!
  • 3 tbsp Rogers Unbleached All-Purpose Flour
  • 1/4 cup grated Parmesan Cheese
  • 3 tbsp butter, melted for richness
  • 1 tbsp chopped parsley for garnish

Method
 

Preparation
  1. Preheat the Oven: Get your oven warmed up to 350°F (175°C).
  2. Prepare Your Pan: Lightly coat a 9" x 5" loaf pan with cooking spray to prevent sticking.
  3. Cook the Stock Mixture: In a medium-sized saucepan over medium-high heat, bring the chicken stock, diced onions, and 1/4 cup of Rogers Porridge Oats to a boil. Once boiling, reduce the heat and let it simmer for about 5 minutes.
  4. Season the Mixture: Remove the stock mixture from heat. Stir in the thyme, sage, salt, and pepper until well combined.
  5. Layer the Ingredients: Start layering—first, place the sweet potato slices at the bottom of the pan, followed by the apple slices, and then the turkey slices.
  6. Pour It Over: Pour the chicken stock and oat mixture evenly over the layered ingredients.
  7. Make the Topping: In a small bowl, mix the remaining 1/2 cup of oats, flour, Parmesan cheese, and melted butter. Spread this topping evenly over the casserole.
  8. Bake: Cover the baking pan with foil and bake for 30 minutes. After 30 minutes, remove the foil and bake for an additional 10-15 minutes, until the sweet potatoes and apples are fork-tender and the top is golden.
  9. Cool and Serve: Remove from the oven and let it rest for 5 minutes before slicing and serving.

Always buy quality ingredients! Organic sweet potatoes and local apples can elevate this dish. Ensure your butter is at room temperature for easy mixing. Feel free to substitute with your favorite grains or even plant-based alternatives for a twist!
