Preparation
- Preheat the Oven: Get your oven warmed up to 350°F (175°C).
- Prepare Your Pan: Lightly coat a 9" x 5" loaf pan with cooking spray to prevent sticking.
- Cook the Stock Mixture: In a medium-sized saucepan over medium-high heat, bring the chicken stock, diced onions, and 1/4 cup of Rogers Porridge Oats to a boil. Once boiling, reduce the heat and let it simmer for about 5 minutes.
- Season the Mixture: Remove the stock mixture from heat. Stir in the thyme, sage, salt, and pepper until well combined.
- Layer the Ingredients: Start layering—first, place the sweet potato slices at the bottom of the pan, followed by the apple slices, and then the turkey slices.
- Pour It Over: Pour the chicken stock and oat mixture evenly over the layered ingredients.
- Make the Topping: In a small bowl, mix the remaining 1/2 cup of oats, flour, Parmesan cheese, and melted butter. Spread this topping evenly over the casserole.
- Bake: Cover the baking pan with foil and bake for 30 minutes. After 30 minutes, remove the foil and bake for an additional 10-15 minutes, until the sweet potatoes and apples are fork-tender and the top is golden.
- Cool and Serve: Remove from the oven and let it rest for 5 minutes before slicing and serving.
