Preparation
- In a large bowl, whisk together the flour, ginger, cinnamon, cloves, baking soda, and salt until well combined.
- In a separate bowl, use an electric mixer to beat the softened butter and packed brown sugar together on medium speed until creamy—about 2 minutes.
- Mix in the molasses, egg, and vanilla extract until everything is combined smoothly.
- Gradually add the dry mixture to the wet ingredients, mixing on low speed until a thick dough forms.
- Cover the dough with plastic wrap and chill in the refrigerator for at least 2 hours.
- Preheat the oven to 350°F (175°C) and grease the baking sheets or line them with parchment paper.
- On a lightly floured surface, roll out the chilled dough to about 1/4 inch thick.
- Use cookie cutters to cut out gingerbread man shapes and place them on the prepared baking sheet.
- Bake for 8-10 minutes, keeping an eye on them; edges should be firm while centers remain soft.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to wire racks. Decorate with royal icing or enjoy them plain.
