Feta Sauce Preparation
- In a food processor, combine Greek yogurt, feta, honey, lemon juice, and minced garlic. Blend until smooth, then fold in fresh dill and set aside.
Roasting Sweet Potatoes
- Preheat your oven to 450°F (232°C). Toss sweet potato cubes in olive oil, and season with salt and pepper. Spread in an even layer on a baking sheet and roast for 25-30 minutes, stirring halfway through.
Harissa Sauce Preparation
- In a bowl, whisk together harissa paste, chicken broth, honey, lemon juice, salt, garlic powder, dried oregano, and cumin.
Cooking Turkey
- Heat olive oil in a skillet over medium-high heat. Add ground turkey and cook until browned. Add diced onion and cook until softened, about 4-5 minutes.
Combine and Thicken
- Pour the harissa sauce over the turkey mixture and stir to combine. Let it simmer for about 5-7 minutes until thickened.
Prepare Rices
- While turkey cooks, prepare frozen cauliflower rice and basmati rice according to package instructions.
Assemble Bowls
- Start with a base of rice. Top with turkey mixture, roasted sweet potatoes, and drizzle with the creamy feta sauce. Finish with a sprinkle of fresh dill.
