Ingredients
  

For the Bowl
  • 2 medium sweet potatoes, cut into 1-inch cubes Organic recommended for best flavor.
  • 2.5 tbsp olive oil (for roasting)
  • Salt and black pepper (to taste)
  • 1 tsp olive oil (for the turkey)
  • 2 lb ground turkey Organic recommended.
  • 1 medium red onion, diced
  • 1/3 cup harissa paste Adds a delightful kick.
  • 1/4 cup chicken broth
  • 1.5 tbsp honey Adds a hint of sweetness.
  • 1 oz lemon juice
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1/2 tsp cumin
  • 12 oz frozen cauliflower rice
  • 12 oz frozen basmati rice
  • Dill (for garnish)
  • 4 oz feta cheese Seek high-quality feta.
  • 1/2 cup Greek yogurt
  • 1 tbsp honey (for the sauce)
  • 1.5 oz lemon juice (for the sauce)
  • 3 cloves garlic, minced Fresh garlic enhances flavor.

Method
 

Feta Sauce Preparation
  1. In a food processor, combine Greek yogurt, feta, honey, lemon juice, and minced garlic. Blend until smooth, then fold in fresh dill and set aside.
Roasting Sweet Potatoes
  1. Preheat your oven to 450°F (232°C). Toss sweet potato cubes in olive oil, and season with salt and pepper. Spread in an even layer on a baking sheet and roast for 25-30 minutes, stirring halfway through.
Harissa Sauce Preparation
  1. In a bowl, whisk together harissa paste, chicken broth, honey, lemon juice, salt, garlic powder, dried oregano, and cumin.
Cooking Turkey
  1. Heat olive oil in a skillet over medium-high heat. Add ground turkey and cook until browned. Add diced onion and cook until softened, about 4-5 minutes.
Combine and Thicken
  1. Pour the harissa sauce over the turkey mixture and stir to combine. Let it simmer for about 5-7 minutes until thickened.
Prepare Rices
  1. While turkey cooks, prepare frozen cauliflower rice and basmati rice according to package instructions.
Assemble Bowls
  1. Start with a base of rice. Top with turkey mixture, roasted sweet potatoes, and drizzle with the creamy feta sauce. Finish with a sprinkle of fresh dill.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days, or freeze turkey mixture for up to 2 months. Reheat gently.
