Ingredients
  

Meatloaf Ingredients
  • 2 cups cooked cauliflower mashed in a colander, squeezing out as much liquid as possible
  • 1/2 cup onion diced
  • 1 cup mushrooms diced
  • 2 large eggs lightly beaten
  • 1 tbsp parsley chopped, or dried
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1.5 lb lean ground turkey
  • 1/4 cup ketchup high-quality, like Heinz, for the best flavor
  • 1/4 cup mustard Dijon works beautifully!
  • 2 tbsp brown sugar to balance out the tang of the ketchup

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Lightly coat a 9" loaf pan with cooking spray.
  3. In a small bowl, whisk together the ketchup, mustard, and brown sugar. Set aside.
  4. In a large bowl, combine all meatloaf ingredients, mixing well until fully combined.
  5. Spread the meat mixture evenly into the prepared pan.
Baking
  1. Bake in the center of the oven for 45 minutes.
  2. Remove from the oven and carefully drain any excess liquid.
  3. Coat the top of the loaf with the glaze mixture.
  4. Return to the oven and bake for an additional 15 minutes or until the internal temperature reaches 160°F (70°C).
  5. Allow the meatloaf to rest for about 10 minutes before slicing and serving.

Notes

For best results, drain the cauliflower well to avoid a soggy meatloaf. Leftovers can last in the fridge for up to 4 days or be frozen for about 3 months.
