Preparation
- Preheat your oven to 400°F (200°C).
- Lightly coat a 9" loaf pan with cooking spray.
- In a small bowl, whisk together the ketchup, mustard, and brown sugar. Set aside.
- In a large bowl, combine all meatloaf ingredients, mixing well until fully combined.
- Spread the meat mixture evenly into the prepared pan.
Baking
- Bake in the center of the oven for 45 minutes.
- Remove from the oven and carefully drain any excess liquid.
- Coat the top of the loaf with the glaze mixture.
- Return to the oven and bake for an additional 15 minutes or until the internal temperature reaches 160°F (70°C).
- Allow the meatloaf to rest for about 10 minutes before slicing and serving.
Notes
For best results, drain the cauliflower well to avoid a soggy meatloaf. Leftovers can last in the fridge for up to 4 days or be frozen for about 3 months.
