Preparation
- Preheat your oven to 350°F and line two 9" round pans with parchment paper, lightly spraying with non-stick spray.
- In a large mixing bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt until evenly combined.
- Slowly whisk in milk, oil, eggs, and vanilla until the mixture becomes smooth and homogenous.
- Carefully stir in boiling water; the batter will be thin, but that’s perfect for a moist cake.
- Divide the batter evenly between the two pans and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Once baked, cool the cakes in the pan for 10 minutes before inverting onto cooling racks. Allow to cool completely.
Frosting
- In a bowl, beat together softened butter, cocoa powder, powdered sugar, vanilla, and salt until smooth, adding milk gradually to reach spreading consistency.
- Place one cooled cake on a serving tray, spread about a cup of frosting on top, and layer the second cake on top. Frost the sides and top generously.
- You can serve immediately or, for enhanced flavor, let it sit overnight.
Notes
For storage, wrap slices in plastic wrap and store them in an airtight container. Can also be frozen individually wrapped. Reheat using an oven or air fryer.
