Preparation
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until fully combined.
- In a separate bowl, mix the milk, eggs, vanilla extract, and melted butter until smooth.
- Gradually pour the wet ingredients into the dry ingredients, mixing gently until just blended. Overmixing can lead to dense fritters!
- In a deep fryer or large pot, heat oil to 350°F (175°C). Drop a small spoonful of batter in to test; it should bubble and float.
Cooking
- Carefully drop spoonfuls of batter into the hot oil and fry until golden brown, about 2-3 minutes on each side.
- Remove the fritters with a slotted spoon and allow excess oil to drain on paper towels.
- Dust generously with powdered sugar before serving and enjoy warm.
Notes
For storage, keep leftovers in an airtight container at room temperature for 1-2 days or freeze for up to a month. You can prepare the batter earlier in the day and fry the fritters fresh when ready.
