Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour I recommend using King Arthur Flour for its consistency.
  • 1/4 cup granulated sugar This helps achieve desirable sweetness without overpowering.
  • 1 tablespoon baking powder Helps achieve a fluffy rise.
  • 1/2 teaspoon salt Balances the sweetness.
Wet Ingredients
  • 1/2 cup milk Whole milk yields the richest results.
  • 2 large eggs Make sure they’re at room temperature for easier mixing.
  • 1 tablespoon vanilla extract Use pure vanilla extract for the best flavor.
  • 1/4 cup unsalted butter, melted Ensure it’s slightly cooled to avoid cooking the eggs.
For Frying and Serving
  • Oil for frying Vegetable or canola oil works well.
  • Powdered sugar for dusting A generous sprinkle makes all the difference!

Method
 

Preparation
  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until fully combined.
  2. In a separate bowl, mix the milk, eggs, vanilla extract, and melted butter until smooth.
  3. Gradually pour the wet ingredients into the dry ingredients, mixing gently until just blended. Overmixing can lead to dense fritters!
  4. In a deep fryer or large pot, heat oil to 350°F (175°C). Drop a small spoonful of batter in to test; it should bubble and float.
Cooking
  1. Carefully drop spoonfuls of batter into the hot oil and fry until golden brown, about 2-3 minutes on each side.
  2. Remove the fritters with a slotted spoon and allow excess oil to drain on paper towels.
  3. Dust generously with powdered sugar before serving and enjoy warm.

Notes

For storage, keep leftovers in an airtight container at room temperature for 1-2 days or freeze for up to a month. You can prepare the batter earlier in the day and fry the fritters fresh when ready.
