Ingredients
  

Truffle Base Ingredients
  • 1 cup dried figs, stems removed and sliced into thirds Turkish figs are preferred for their sweetness.
  • 1/3 cup unsweetened shredded coconut Look for organic if possible.
  • 1/3 cup walnut pieces Feel free to substitute with almonds, pecans, or sunflower seeds.
  • 1/8 tsp salt Himalayan salt adds a lovely flavor.
  • 1/2 cup high-quality dark chocolate chips Use vegan options like Enjoy Life or Pascha with at least 70% cacao.

Method
 

Preparation
  1. In a food processor, combine the dried figs, shredded coconut, walnut pieces, and salt. Blend for about 4-6 minutes, scraping down the sides as needed. The mixture should clump together but not turn into a paste.
  2. Take tablespoons of the mixture and roll them into balls to make about 12 truffles.
  3. Place the rolled truffle balls in the freezer for at least 30 minutes to help them hold their shape.
  4. While the truffles chill, melt the dark chocolate over low heat in a saucepan or in the microwave, stirring often until smooth.
  5. Once the truffles are firm, dip each one into the melted chocolate using a fork, letting the excess drip off before placing them on a parchment-lined baking sheet.
  6. Get creative! Drizzle some extra melted chocolate over the top, or sprinkle with coconut or colorful sprinkles.
  7. Chill the truffles again for about 15-20 minutes until the chocolate hardens.

Notes

High-quality dark chocolate enhances flavor. Truffles can be made ahead and stored in an airtight container. Keep in the fridge for up to a week or freeze for a month. Avoid pureeing mixture into a paste.
