- In a food processor, combine the dried figs, shredded coconut, walnut pieces, and salt. Blend for about 4-6 minutes, scraping down the sides as needed. The mixture should clump together but not turn into a paste.
- Take tablespoons of the mixture and roll them into balls to make about 12 truffles.
- Place the rolled truffle balls in the freezer for at least 30 minutes to help them hold their shape.
- While the truffles chill, melt the dark chocolate over low heat in a saucepan or in the microwave, stirring often until smooth.
- Once the truffles are firm, dip each one into the melted chocolate using a fork, letting the excess drip off before placing them on a parchment-lined baking sheet.
- Get creative! Drizzle some extra melted chocolate over the top, or sprinkle with coconut or colorful sprinkles.
- Chill the truffles again for about 15-20 minutes until the chocolate hardens.
Notes
High-quality dark chocolate enhances flavor. Truffles can be made ahead and stored in an airtight container. Keep in the fridge for up to a week or freeze for a month. Avoid pureeing mixture into a paste.
