  • 1/2 teaspoon peppermint extract Ensure it's pure for the best results.
  • 1/4 cup coconut oil, melted Binds everything together; use refined for milder flavor.
  • 1 cup dark dairy-free chocolate chips Look for at least 70% cocoa for rich flavor.
  • 1 teaspoon coconut oil (for chocolate) Gives chocolate a nice shine.

Method
 

Preparation
  1. In a mixing bowl, combine the almond flour, maple syrup, peppermint extract, and melted coconut oil. Mix until you achieve a dough-like consistency (about 2-3 minutes).
  2. Cover the bowl and chill the mixture in the fridge for about 30 minutes.
  3. Once the mixture is firm but not hard, scoop it out and form small patties, aiming for about 1-inch discs. Place them on a lined baking sheet.
  4. Transfer the baking sheet to the freezer and let the patties freeze for about 15 minutes until solid.
  5. While the patties are freezing, melt the dark chocolate chips with additional coconut oil using a microwave or double boiler.
  6. Once the patties are frozen solid, dip each one into the melted chocolate, ensuring they are fully coated. Return to the lined baking sheet.
  7. Allow them to set at room temperature or refrigerate until the chocolate firms up (about 15-20 minutes).
