- In a mixing bowl, combine the almond flour, maple syrup, peppermint extract, and melted coconut oil. Mix until you achieve a dough-like consistency (about 2-3 minutes).
- Cover the bowl and chill the mixture in the fridge for about 30 minutes.
- Once the mixture is firm but not hard, scoop it out and form small patties, aiming for about 1-inch discs. Place them on a lined baking sheet.
- Transfer the baking sheet to the freezer and let the patties freeze for about 15 minutes until solid.
- While the patties are freezing, melt the dark chocolate chips with additional coconut oil using a microwave or double boiler.
- Once the patties are frozen solid, dip each one into the melted chocolate, ensuring they are fully coated. Return to the lined baking sheet.
- Allow them to set at room temperature or refrigerate until the chocolate firms up (about 15-20 minutes).
