Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the melted coconut oil and brown sugar until smooth.
- Add the maple syrup and vanilla extract, mixing well until combined.
- In another bowl, whisk together the gluten-free flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until fully combined.
- Fold in the dairy-free white chocolate chips and crushed peppermint candies.
- Drop tablespoon-sized amounts of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Baking
- Bake for 10-12 minutes, or until the edges are slightly golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Chill your dough for 30 minutes for chewier cookies. Store in an airtight container for up to 4 days, or refrigerate for up to a week. Freeze for up to 2 months.
