Ingredients

Salad Ingredients
  • 2 pieces Honeycrisp Apples, thinly sliced Choose firm, fresh ones for the best crunch.
  • 4 cups Mixed Greens (A combination of arugula and butter lettuce) Feel free to use spring mix if that’s what you have.
  • 1 cup Feta Cheese, crumbled Opt for a high-quality feta for better flavor.
  • ½ cup Chopped Walnuts Can substitute with toasted pecans for a slightly different flavor.
  • ½ cup Dried Cranberries Or substitute with any dried fruit—apricots work beautifully too.
Dressing Ingredients
  • 2 tablespoons Olive Oil Use high-quality oil for the best dressing.
  • 1 tablespoon Apple Cider Vinegar Can substitute with lemon juice for a zesty twist.
  • 1 teaspoon Honey Adjust according to the sweetness of your apples; raw honey adds a lovely rich flavor.
  • Salt, to taste
  • Pepper, to taste

Method

Preparation
  1. Rinse and dry the mixed greens thoroughly. A salad spinner works wonders here; you want them to be completely dry to avoid a soggy salad.
  2. Core and thinly slice your Honeycrisp apples. No need to peel them; the skin adds color and texture.
  3. Heat a skillet over medium heat. Add the chopped walnuts and toast them for about 3–5 minutes, stirring frequently until they are golden and fragrant. Watch closely to avoid burning!
Assembly
  1. In a large bowl, combine the greens, sliced apples, crumbled feta, toasted walnuts, and dried cranberries.
  2. In a small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper until emulsified. Drizzle over the salad and toss gently.
  3. Enjoy immediately for the freshest taste. Pair with crusty bread or your favorite protein for a complete meal.

Notes

If you have leftovers, store the salad's ingredients separately to avoid sogginess. Wait to add the dressing until you’re ready to eat.
