Preparation
- Trim the green beans and cut them into 2-inch pieces. Dice the red onion, mince the garlic, grate the ginger, and cut the carrots into thin matchsticks.
- Prep all ingredients and have them ready before cooking.
Cooking
- In a large skillet, heat 2 tablespoons of oil over medium-high heat until shimmering.
- Add 1.25 lb ground turkey to the skillet. Cook, stirring occasionally, for about 5-7 minutes, until browned and no longer pink.
- Add the diced red onion and cook for 2-3 minutes until translucent. Stir in the minced garlic and grated ginger, cooking for an additional 30 seconds.
- Incorporate the green beans and pour in the teriyaki sauce. Bring to a gentle boil, reduce heat, and simmer uncovered for 8-10 minutes.
- Add the matchstick carrots and simmer for another 5 minutes. Adjust seasoning if needed.
- Transfer the dish to a serving bowl and serve with steamed rice or as is.
Notes
Leftovers can be stored in airtight containers in the fridge for up to 3 days. You can prepare the veggies ahead of time to make cooking quicker.
