  • 1 cup teriyaki sauce Opt for a quality brand like Kikkoman or make your own.
  • 2 tbsp oil Use olive oil or sesame oil for added flavor.
  • 1.25 lb ground turkey Lean turkey is preferred; turkey thigh for a richer taste.
  • 0.6 lb green beans Fresh and crisp, trimmed.
  • 1.25 cup red onion Chopped finely for sweetness.
  • 6 cloves garlic Mince for a pungent kick.
  • 1.5 tsp ginger Freshly grated is preferred.
  • 0.5 cup carrots Cut into thin matchsticks.

Preparation
  1. Trim the green beans and cut them into 2-inch pieces. Dice the red onion, mince the garlic, grate the ginger, and cut the carrots into thin matchsticks.
  2. Prep all ingredients and have them ready before cooking.
Cooking
  1. In a large skillet, heat 2 tablespoons of oil over medium-high heat until shimmering.
  2. Add 1.25 lb ground turkey to the skillet. Cook, stirring occasionally, for about 5-7 minutes, until browned and no longer pink.
  3. Add the diced red onion and cook for 2-3 minutes until translucent. Stir in the minced garlic and grated ginger, cooking for an additional 30 seconds.
  4. Incorporate the green beans and pour in the teriyaki sauce. Bring to a gentle boil, reduce heat, and simmer uncovered for 8-10 minutes.
  5. Add the matchstick carrots and simmer for another 5 minutes. Adjust seasoning if needed.
  6. Transfer the dish to a serving bowl and serve with steamed rice or as is.

Notes

Leftovers can be stored in airtight containers in the fridge for up to 3 days. You can prepare the veggies ahead of time to make cooking quicker.
