Salad Ingredients
  • 4 cups Mixed greens (such as spinach, arugula, or kale) Choose fresh and organic if possible.
  • 1 cup Sliced carrots
  • 1 cup Cherry tomatoes, halved
  • 1 medium Cucumber, diced
  • 1/4 cup Red onion, thinly sliced
  • 1 cup Pomegranate seeds Look for pomegranates that feel heavy for juiciness.
  • 1/2 cup Walnuts, chopped Can be substituted with pecans or sunflower seeds.
  • 1 cup Feta cheese, crumbled For dairy-free, substitute with coconut yogurt.
Dressing Ingredients
  • 2 tablespoons Honey (local is best!)
  • 1 tablespoon Dijon mustard Can substitute with yellow mustard or lemon juice.
  • 1/4 cup Olive oil (extra virgin for best flavor)
  • to taste Salt and pepper Add to preference.

Preparation
  1. In a large bowl, combine the mixed greens, sliced carrots, cherry tomatoes, diced cucumber, red onion, pomegranate seeds, walnuts, and feta cheese. Mix gently until well combined.
Dressing
  1. In a small bowl, whisk together the honey, Dijon mustard, olive oil, salt, and pepper to create the dressing.
Combining
  1. Drizzle the dressing over the salad and toss gently to combine.
Serving
  1. Serve immediately and enjoy this fresh and colorful holiday side dish.

Notes

Store leftovers separately; salad and dressing in airtight containers. Can be made a day in advance, but dress right before serving.
