Chicken Cooking
- Season the Chicken: While the quinoa cooks, season your 2 chicken breasts with salt and pepper.
- Cook the Chicken: Heat olive oil in a large skillet and cook chicken for about 6-7 minutes on each side until golden brown.
- Sauté the Garlic: Remove chicken and sauté minced garlic in the same skillet for about 30 seconds.
Final Assembly
- Combine: Return chicken to the skillet, pour in lemon juice, and stir to combine.
- Mix with Quinoa: Fluff cooked quinoa and add to the skillet, mixing well with chicken and garlic.
- Garnish and Serve: Sprinkle chopped parsley over the top and serve hot.
