Ingredients
  

For the Chicken
  • 2 pieces boneless and skinless chicken breasts I recommend using organic chicken for the best flavor!
  • 3 cloves Garlic, minced Fresh garlic truly elevates this dish.
  • 1/4 cup Lemon juice, freshly squeezed Trust me, fresh is best; it gives a bright burst!
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
For the Quinoa
  • 1 cup Quinoa, rinsed Rinsing removes the natural coating, saponin, which can be bitter. Use red quinoa for an extra colorful dish!
  • 2 cups Chicken broth You can use low-sodium or homemade broth for an added depth of flavor.
  • 1/4 cup Fresh parsley, chopped This adds a wonderful pop of freshness!
Optional Add-ins
  • 1/4 teaspoon Red pepper flakes For a little kick!
  • 1 cup Cherry tomatoes, halved Adding sweetness and color!
  • 2 cups Spinach or kale More greens for a nutrient boost!

Method
 

Preparation
  1. Rinse the Quinoa: Place 1 cup of quinoa in a fine mesh strainer and rinse it under cold water until the water runs clear.
  2. Cook the Quinoa: In a medium pot, combine the rinsed quinoa and 2 cups of chicken broth. Bring to a boil, then reduce the heat to low and cover. Simmer for 15 minutes or until the quinoa is fluffy.
Chicken Cooking
  1. Season the Chicken: While the quinoa cooks, season your 2 chicken breasts with salt and pepper.
  2. Cook the Chicken: Heat olive oil in a large skillet and cook chicken for about 6-7 minutes on each side until golden brown.
  3. Sauté the Garlic: Remove chicken and sauté minced garlic in the same skillet for about 30 seconds.
Final Assembly
  1. Combine: Return chicken to the skillet, pour in lemon juice, and stir to combine.
  2. Mix with Quinoa: Fluff cooked quinoa and add to the skillet, mixing well with chicken and garlic.
  3. Garnish and Serve: Sprinkle chopped parsley over the top and serve hot.
