Preparation

  4. Combine the wet and dry ingredients, mixing gently until just combined—do not overmix.
Baking
  1. Pour the batter into the prepared baking dish, spreading it out evenly.
  2. Bake for 25-30 minutes or until a toothpick comes out clean.
  3. Allow to cool before applying the cream cheese icing for a sweet finish.

Notes

Consider swapping refined sugar for monk fruit to reduce sugar content while maintaining sweetness. For vegan option, substitute eggs with a flaxseed meal. For gluten-free, use a gluten-free flour blend.
